Burrata, Pistachio and Pomegranate

I love this simple appetizer, and so do my friends. Quantities can be whatever you want them to be to suit your taste and the crowd size. Below is a guideline for a perfectly portioned appetizer for 2-3 people. Serve with crostini, naan bread, or sliced baguette.

Burrata, Pistachio and Pomegranate Appetizer


Ingredients

  • 3-4 oz. burrata

  • 2 T. olive oil

  • 2 T. pomegranate arils

  • 1/8 c. pistachio nuts, roughly chopped

  • Drizzle of pomegranate molasses

  • Salt and pepper


Directions


Place the burrata on a paper towel for a few minutes to absorb the water.


Drizzle 1 T. olive oil on the serving platter. Place burrata on top and drizzle the remaining oil, plus a little more if desired. Sprinkle with arils, pistachios, and a drizzle of pomegranate molasses. Finish with sea salt and fresh cracked pepper to taste.


Serve with sliced baguette, crostini, naan bread, or your favorite cracker


As a salad This appetizer makes a fabulous salad. Place about 2 oz. of burrata on a bed of mixed greens or arugula, top with pistachios and pomegranate seeds, and drizzle with olive oil and molasses, salt and pepper to taste.
