Herb Butter

Compound butters have a way of turning the ordinary into the extraordinary. They’re a little luxury you can whip up with ease and, as a bonus, they make the most thoughtful (and delicious!) gifts. Whether spread over sizzling steaks, slathered on roasted veggies, or melting on everyone’s favorite—garlic bread—they have a magical way of elevating any dish.

 

This recipe is for an all-time classic—garlic rosemary. The ingredients are flexible by adjusting quantities up or down to suit your needs. Use a fun silicone mold for a touch of whimsy, or simply roll the butter into a log, wrap it up, and savor the possibilities.  


Ingredients

  • Garlic Rosemary

  • 2 c. butter, softened (4 sticks)

  • 4 T. fresh rosemary, minced, plus extra for garnish

  • 2 T. minced garlic

  • 2 t. lemon juice

  • Cracked pepper to taste

  • Silicone molds

 

Directions

Combine all ingredients thoroughly. I like to use a food processor when making large batches to ensure herbs are thoroughly mixed in with the butter. Shape in silicone molds, or as a log. I find the silicone molds to be much easier and I prefer the individual medallions. If your preference is rolling the butter into a log, check out this helpful video.

 

There are endless combinations – here are a few of my favorites using 2 c. butter.

:

Sage Butter – 6 T. fresh sage

Sun Dried Tomato & Garlic – 4 T. minced sun-dried tomatoes, and 2 T. garlic. Also, try roasting your garlic for an earthy flavor.

Brown Sugar, Cinnamon - 1 c. brown sugar and 1 t. cinnamon

Pumpkin Spice & Maple - 1 c. brown sugar, 1/2 c. maple syrup, 2 t. pumpkin spice

Basil & Sage - 3 T. basil and 3 T. sage

Dill, Chive & Garlic - 2 T. each, dill, chive, and garlic
